I have to write and tell you all about a new recipe I came up with purely by accident. I was having people come over for a Greek night and since most of them are vegetarian I came up with this recipe which tasted fantastic!
All you need is:
1 Jar of grape leaves
1/2 cup of brown rice
3 large portabella mushrooms
salt and pepper to taste
1/2 cup of almonds*
1 small onion
1 cup vegetable broth or water
1/2 cup water
First of all I cut up the onion and mushrooms and sautéed them until soft. I added salt and pepper to taste and took off the stove; then I mixed in the rice and almonds and rolled about 1 tablespoon of the mixture into each grape leaf. After arranging them in a small pot (the Greek secret is to put a small plate on the top, so the dolmades remain in tact) and putting my little plate over them, I added about 1 cup vegetable broth (you can use water) and 1/2 cup water and cooked on medium heat for about 45 minutes or until the rice is cooked.
They turned out so much better than I expected, I have since made them about two more times, but this time I did not use olive oil so they were completely fat free. And to me they tasted the same!!! So try them and enjoy! They go great with a little plain soy yogurt!
*substitute with water chestnuts or celery to eliminate fat
