basmati rice (cooked according to directions)
black beans (cooked according to directions)
lettuce (chopped)
onion (chopped)
tomato (chopped)
any “mock” shredded cheddar that melts well
fat free Italian dressing OR organic salsa
Layer the ingredients on separate plates in the following order:
Lettuce, basmati rice, black beans, “cheese”, onion, and tomato.
Top with either the dressing or the salsa … either way, this recipe is simple and DE-LISH!!!
