6 small sweet potatoes, peeled and grated
3 apples, peeled and grated
1 cup raisins
1 cup matzo meal
2 tsp cinnamon
1 cup fruit juice or water
Preheat oven to 375 degrees. Mix ingredients together. Press into large baking dish. Bake 45 minutes at 375 degrees until crisp on top. Serves 12.

This is a great recipe to use in place of a traditional sweet potato recipe. This is what I think I will make this year for Thanksgiving. For anyone who is not familiar with matzo meal its the same as cracker crumbs, whole wheat would be best of course.
