Raw Cranberry Relish
1 orange, peeled
1 cup fresh or frozen cranberries
1 medium apple, quartered
5 pitted dates (or to taste)
1/3 cup pecans or walnuts (optional)
Zest of 1 orange
Place all ingredients in a food processor and pulse till chunky-enjoy. Even better the next day.
I also like to make a blended salad with ¼ cup of the cranberry relish, 1 heart of romaine (torn into pieces), 2 Tablespoons balsamic vinegar-put all in food processor and pulse just till mixed and you have a fat free, sugar free salad that tastes great.

My mom’s raw cranberry relish is just like this, only she adds fewer ingredients. I don’t feel like the dates are neccesary and only add unneccesary sugar/calories. My mom just adds an apple, raw fresh (not frozen to preserve healthy enzymes) craberries, and liquid stevia sweetener into the food processor. Even my younger sisters, who consume nothing but junk food and pizza all day, love this for the holidays!
