I have been re-creating childhood favorite recipes into healthy, vegan meals lately and my kids have been LOVING it! This vegan hamburger helper style recipe has received rave reviews. It is a quick, easy and absolutely delicous family meal. I used gluten free pasta in this recipe because me and my daughter have celiac but you can use any pasta that you like, it would even work really well with brown rice if you want to make it a whole foods recipe.
8 oz. shell pasta cooked [we used gluten free brown rice pasta]
1 c. black bean or lentil burgers
1/4 c. vegetable broth
1/3 c. yellow onion diced
1 clove garlic minced
1 – 15 oz. can italian diced tomatoes
1 c. broccoli
1/3 c. carrot juice
1 Tb. Italian seasoning
1 c. vegan cheese sauce
1/2 tsp. garlic powder
1/2 tsp. salt
Sautee onion, spices, and garlic in vegetable broth until onion is translucent, broccoli, tomatoes, carrot juice, and simmer until broccoli is bright and softened. Add pasta and crumbled burgers and stir well, top with cheese sauce and serve.

It is really hard to say how many servings the cheese sauce makes because it depends on what you use it for. In a casserole or on pizza it might serve 6 but used for quesadillas or a drizzle on pasta it may have 24 servings.
