It’s the perfect time for fresh corn and here’s a recipe you can eat raw or cooked.
Those whose preferences lean toward the spicy will love this salad. Adjust the heat by increasing or decreasing the amount of jalapeño and chipotle chile.

This simple salad is especially delicious in the autumn when apples are fresh. Using a pre-washed salad mix makes it easy to prepare.
This is my favorite salad so far, and I made it up pretty much by myself. 🙂 (Hence the lack of precise measurements.) It looks a bit messy but tastes great.
The tofu makes a very creamy dressing, which you can use in many different recipes such as on tropical fruit for a first course or for a delicate mixed greens salad garnished with fresh fruit. Other possibilities include using it as a dessert sauce over frozen fruit-flavored yogurt or as a flavorful topping for cut-up fruit for dessert.

Today I whipped together ingredients that were in my fridge to create a filling vegan salad dressing and I really liked the results!
Dressing will last for up to one week in a tightly sealed jar in the refrigerator.
