Wheat Germ Muffins
Source: Strict Vegetarian Cookbook
1 1/4 cups water
1/2 cup applesauce
2 tsp. yeast
1/2 tsp. salt
1/2 tsp. vanilla
3/4 cup raisins or dates
1/2 tsp. grated orange rind (optional)
1 cup wheat germ
whole wheat pastry flour as needed
1/2 cup soy flour
Prepare muffin tins with PAM and fill to 2/3 full. Let rise 30 minutes. Preheat oven to 350°.
Bake about 20 minutes. Watch carefully as they tend to burn easily.
Yield: 10 – 12 muffins.

Are you using RAW Wheat Germ in this recipe? I have some raw wheat germ and I was wondering how to use it.
