This recipe may look complicated but it really isn’t. If you make it often, it can be simplified by chopping several batches of fruit at a time and packaging them in separate packages.
Combine these great grains the night before so breakfast is ready when you are the next morning. This fragrant, hot cereal is good served with a little maple syrup or brown sugar and a splash of vanilla soy milk. Cinnamon or allspice may be used instead of cardamom.
Fresh and dried mushrooms combine for a woodsy mushroom-flavored risotto that needs no watching or constant stirring like traditional risottos. Instead, spend your time with your family, soaking in the tub, or reading a good book.
1 lb greens (kale, turnip, chard, spinach….)
1 large bell pepper, chopped (orange is prettiest)…
I usually make a double batch of these and freeze the leftovers. They reheat in the microwave within minutes. I’ve even made these in the microwave on High for about 20 minutes. Since everyone’s oven is different, yours may take less or more time than mine. Since it’s going up to 90 today, that’s probably how I’ll make this batch.
This may also be made in a slow cooker overnight. Combine all of the ingredients and cook on low for 8 to 10 hours.
Combine all ingredients and bake at 350 degrees for 1/2 hour. Serve with granola and fresh or canned fruit.
very large serving and delicious. I ate it all but could definitely feed 2.
