Ok, this turned out to be the most popular dish at out Thanksgiving dinner. I completely made it up as I went along, so I was scared to death. Here’s the quick (non measured, sorry!)
A delicious Fall stew you can make in your crockpot or in a regular saucepan.
Cook 1 and 1/2 cups lentils in 2 and 1/2 cups water. Mash very well and then add:
2 chopped, cooked onions…
1 lb. fresh, ripe, red Roma tomatoes
2 Garlic cloves
2 small or medium Carrots, chopped…
This is a delicious tomato sauce that is wonderful on pasta, baked potatoes or over rice. It tastes even better the day after it is made and may also be frozen.
