Cooking Indian Recipes Without Oil

A few tips for cooking Indian food without added fat.

Mexican Crock Pot Beans

Easy Mexican-style beans in the crock pot.

Mayo/Sour Creme

This recipe was adapted from “Tofu Cookery” by Louise Hagler. The oil has been omitted from an otherwise wonderful recipe and the quantity of tofu changed for convenience.

Easy Creamy Salad Dressing

I like creamy salad dressings that seem full of fat so since we can’t have that “fat” (nasty word)–here is my salad dressing:

Melty Pizza Cheese

I love this recipe. I follow the variation at the bottom to make a cheddar “cheese sauce” and pour it over baked potatoes topped with broccoli for a great no-fat meal. Another thing I do is make a nacho cheese dip by following the variation, but instead of using non-dairy milk, I use Rotel spicy tomatoes. Goes great with baked tortilla chips!

Hearty-Hearty Minestrone Soup

Another great recipe submitted by Katherine Lawrence of www.plantbasedhealth.com

Savory Potato Pear Stew

This stew was inspired by a vacation—it was time to clear out the fridge, stoke up on immune boosting beta-carotene and have leftovers in the freezer upon our return home.

Thick Tex-Mex Chili

I love thick, hearty chili in cold weather. It’s always so satisfying and filling, so it makes a great comfort food…especially when served my favorite way: over warm grits!

Raw Cranberry Relish

This recipe is an adaptation of Cranberry Relish Sauce in the Vita-Mix cookbook plus the idea to use dates from the “Cook and the Dietitian”. I came up with the idea for the blended salad and use my vita-mix on a low speed to blend.

Coconut Lemon Macadamia Candies

Coconut Lemon Macadamia Candies are full of flavor in a tiny candy size. Family tested & kid approved!

Mock Corned Beef and Cabbage

Seitan is used instead of beef in this traditional St. Patrick’s Day dish.

Hartzie’s Cranberry Mold

You can make this recipe up to 3 days ahead.

Creamy Pumpkin Soup

A delicious, creamy soup with no cream or added fat.
