Mexican Salad

This is my favorite salad so far, and I made it up pretty much by myself. 🙂 (Hence the lack of precise measurements.) It looks a bit messy but tastes great.

Melon and Banana Slaw

The tofu makes a very creamy dressing, which you can use in many different recipes such as on tropical fruit for a first course or for a delicate mixed greens salad garnished with fresh fruit. Other possibilities include using it as a dessert sauce over frozen fruit-flavored yogurt or as a flavorful topping for cut-up fruit for dessert.

Marinated Garbanzo Salad

4 cups cooked garbanzos-(allow to cool)
1 cup roasted red peppers, cut into strips (Trader Joe’s)…

1-2 large tomatoes, chopped…

Vegan Mayo

This is the one I teach at McDougall program and use all the time -great for potato salad with lots of dijon. Vit C makes it nice and tart – more like a sour cream than a mayo.

Slow Cooker Vanilla Fig Oatmeal Topped with Baklava Filling

You can leave off the topping altogether or just use a teaspoon or two of your favorite nut. Depending on how sweet your figs are you may need to add a little sweetener if you make it that way.

Slow Cooker Carrot Cardamom Oatmeal

This oatmeal is inspired by an Indian dessert Carrot Halwa. Carrot Halwa is a thick paste of carrot, sugar and cardamom that’s sometimes topped with saffron and pistachios.

This slow cooker oatmeal is soy-free, gluten-free, and full of chocolaty goodness. It uses cocoa, So Delicious Coconut Milk, unsweetened coconut, and slivered almonds to mimic the taste of an Almond Joy.

Green Cabbage Soup

I think shaking up some sweet salsa in a squeeze bottle and drawing a heart outline on each soup’s bowl’s surface, with the cilanto dusting would make it a great Valentine’s dish.
