Chickpea Snack Submitted by: Shelley G. Chickpeas are such a great food. I like to mix canned chickpeas with lime juice, fresh cilantro, garlic, and cumin (or chili powder). It’s a great snack and makes a refreshing salad if you chill it and serve it with romaine lettuce and tomato wedges.
Puree everything except the optional extra scallions and tomatoes. Then mix in those optional extras, if using. Done!
Our Fred Meyer’s has mangos on sale this week and I printed this recipe in the food ad. I love mangos!
This easy appetizer keeps so well in the refrigerator that you can make it the day before without fear of it losing flavor.
Made this up last night…it tastes great and is a good way of getting some extra greens into your diet! Serve it as a dip with fresh veggies and pita wedges.
Hints: For a spicy dip, use Taco Seasoning Mix made by Bearitos or Hain. For a delicious French Onion Dip, use the one made by Simply Organic. Simply Organic makes a delicious Dill Dip also, as well as several others, including a Southwest Taco. Other packaged mixes may be available in your local natural food stores. Read the labels carefully for healthy ingredients with no added oils or animal products.
This is great as a dip for veggies or baked chips, or as a taco or burrito filling.
