These are a little chewy at first and the texture improves as they cool but they are DELICIOUS when they come out of the oven, and I doubt they’ll last. They also rise really well.

Granola

Here is a recipe I love for a no-added-fat granola. It is adapted from a recipe in John Robbins’ Diet for a New World. It does have nuts and sunflower seeds, which you could reduce, eliminate, or change, if you wish.

Spring Sunshine Breakfast Couscous

NOTES: This recipe is extremely low fat – couscous itself contains almost no fat and no saturated fat so the only fat comes from the soymilk. To make this recipe completely fat free, soymilk can be replaced with apple juice, however, this reduces the other nutrients etc like calcium.

Chuck’s Fat-Free Granola

Watch those edges toward the end, as they’ll brown or burn. But, the result is a nice crunchy texture.

Yummy Cereal

NOTE: Most rice flakes are made with sugar, which is undesired if it is refined. I found some at my health food shop which are made with apple juice concentrate and they are much thicker and less crunchy but still nice.

Zingy Bean Dip

Puree everything except the optional extra scallions and tomatoes. Then mix in those optional extras, if using. Done!

Summer Rolls

This lighter, cooler variation of the spring roll is not fried so there is not a lot of added fat. This is an Vietnamese recipe, so the only specialty item you will need are rice flour wrappers rolls (as opposed to spring roll or wonton wrappers), found in Asian supermarkets, gourmet groceries and the Internet.
